Ingredients

  • 1 bundle of asparagus
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ cup shaved parmesan
  • ¼ cup pine nuts
  • Balsamic glaze for serving

Instructions

  • Toast the pine nuts in the oven at 375°F (190°C) for 5-6 minutes until golden brown.
  • Preheat the oven to 425°F (220°C) and prepare a separate baking pan.
  • Snap off the woody ends of the asparagus and toss with olive oil, garlic, salt, and pepper.
  • Arrange the asparagus in a single layer on the pan and bake for 10-12 minutes.
  • Top with shaved parmesan and toasted pine nuts, then drizzle with balsamic glaze before serving.

Notes

  • Cheese Tip: Use freshly shaved Parmesan for the best melt and flavor.
  • Nut-Free Option: Omit pine nuts or substitute with toasted sunflower seeds.
  • Make Ahead: Toast pine nuts and prep asparagus up to a day in advance.
  • Balsamic Glaze Tip: Store-bought glaze is convenient, but you can also reduce balsamic vinegar with honey for a homemade version.
